By the late 18th century, it was common for the poor of the area around Naples to add tomato and other toppings for many years to their yeast-based flatbread, thus the pizza began. Raffaele Esposito, a baker from Naples, Italy, is given credit for making the first such pizza pie with creating the modern pizza in the late 1800s.
Esposito is said to have come up with the idea of eating the flatbread with cheese, and later added tomato sauce.
In 1889, he made a pizza in honor of Queen Margherita of Savoy and King Umberto I, during their visit to Naples. The pizza included basil, cheese and tomato sauce, representing the colors of the Italian flag. And that is why he named it as the Queen "Margherita Pizza".
Neapolitan pizza is certified according to the AVPN (Associazione Versace Pizza Napolenta) guidelines.Such guidelines include the method of production, the shape of the round dough, the cooking and the toppings.
The must have features of Neapolitan pizzas are its dough, made with Italian ‘00’ flour, fermented for 24-48 hours, San Marzano Tomatoes and fresh Fior Di Latte Mozzarella.
